SOON KUEH

Traditionally in Swatow, China, the Soon Kueh skin is made entirely out of milled rice, while the filling is packed with Bamboo Shoots and starches like carrots and Jicama.

However, it has adapted to fit the taste buds of Singaporeans with the softer exterior containing a mixture of Tapioca starch and Rice flour - largely influenced by the Peranakan Kuehs

The filling also has a different meaning to Singaporeans. We know of Soon Kueh as the kueh having the Jicama filling rather than bamboo shoots, because in the past, Jicama is easily obtained and cheaper than bamboo shoots.
